As we continue to take a good look at the Beatitudes in Matthew chapter 5, we’re going to concentrate this week on verse 4, which says, “Blessed are those who mourn, for they will be comforted.” The Greek word for “blessed” means to be fortunate, well off, and mostly it means to be happy. This seems to be a little contradictory if we think about going through mourning so that we can be happy. I mean, who wants to be sad just so that we can be happy? All of us have been through rough and trying times that grieve our very souls. Several y...
“You are being protected by God’s power through faith for a salvation that is ready to be revealed in the last time. You rejoice in this, though now for a short time you have had to struggle in various trials so that the genuineness of your faith – more valuable than gold, which perishes though refined by fire – may result in praise, glory, and honor at the revelation of Jesus Christ” (1 Peter 1:5-7, HCSB). In this passage is found the word genuineness. Peter is referring to a person’s...

Extension offices across the state are receiving questions from constituents with concerns about canning apples due to recent data indicating that apples may have a pH above 4.6. Fruits generally have a pH below 4.6 making them a high-acid food and safe for water-bath canning. Low acid foods (foods with a pH above 4.6) can allow growth of C botulinum bacteria, which is why low acid foods require additional controlling measures when canning, such as by adding an acid or by pressure canning. The National Center for Home Food preservation...

I have been going through the food inventory at our house to use up some of it. I would buy something that Cleo liked to eat, and after it hit the freezer, it disappeared. Between some stories on MSN, and warnings from Grace and Michelle, I am not so optimistic about out-of-date stuff. Canned goods will be okay for a while after the expiration date. Lettuce not so much. I called Michelle to ask if the two years out of date shrimp would be okay, she said probably not, but I could feed it to the c...

The past couple of weeks my attitude went down faster than the gauge on my propane tank. I loathe winter. Well, that isn’t exactly the whole truth. I loathe bad weather during the winter. As much as I despise bad weather in the winter, I absolutely love spring and summer and fall. The coming spring season has helped rejuvenate my physical body. The past couple of days with the sun shining have already filled up my Vitamin D tank and I am eagerly anticipating the growing seasons that are coming. We completed a seed order today. We also o...
The fact that I am writing this means that I am breaking one of the rules that I imposed on myself when I started this column: to stay away from politics. With that said, I saw something on TV as I was getting ready for work recently that incensed me to my very core, and I realized there was one thing getting overlooked in the bickering between the right and the left, and that is America itself. What I saw was a politician who said, “America has gone to Hell.” I understand that political seasons...
Have you ever watched a volleyball game and witnessed an entire team suddenly duck under the net and join the other team? Gasping for a breath of hope that isn’t there, they had finally thrown up their hands in despair and crossed to the other side of the net. Just gave up, gave in and joined the enemy. As much volleyball as I have watched and played through the years, no matter how bad one team is trouncing the other – and that has been witnessed, believe me – I have never seen that happe...
“Say what you mean and mean what you say.”—George S. Patton. In a recent article, Jamie Lee Curtis added, “But don’t say it mean.” Patton would never have been accused of that ending! The question is: how aggressive do you need to be to get your point across? At its core, saying what you mean underscores the importance of clarity, sincerity and consistency in our interpersonal relationships. You should be trying to communicate in an orderly and objective manner. In doing so, misundersta...
