As we continue to take a good look at the Beatitudes in Matthew chapter 5, we’re going to concentrate this week on verse 4, which says, “Blessed are those who mourn, for they will be comforted.” The Greek word for “blessed” means to be fortunate, well off, and mostly it means to be happy. Extension offices across the state are receiving questions from constituents with concerns about canning apples due to recent data indicating that apples may have a pH above 4.6. Fruits generally have a pH below 4.6 making them a high-acid food and safe for water-bath canning. Low acid foods (foods with a pH above 4.6) can allow growth of C botulinum bacteria, which is why low acid foods require additional controlling measures when canning, such as by adding an acid or by pressure canning. When I wrote my last article in December, I spoke a little bit about taking time away from the busyness of the world to have a special time to remember the reason for the season.
